Yoghurt formation :

                     Yoghurt is a dairy product which is produced by bacterial fermentation of milk . Most commonly , cow milk is used , but it can be made from any kind of milk .

In this processes the milk sugar i.e lactose is fermented into lactic acid by the bacteria . These bacteria are  Streptococcus salivarius, S. thermophiles and lactobacillus bulgaricus.

These bacteria are simply known as lactic acid bacteria . 

Bacteria feeds on lactose and release lactic acid as a bye product . This acid causes the curdling of the milk protein , into a solid mass called curd .

Casein is the milk protein .

The gel like texture and test of yogurt is due to the fermentation of lactose to lactic acid . The pH of yoghurt is 4-5 . The increase in acidity prevents the proliferation of potentially pathogenic bacteria .
